 期,不少專家指出,進補講究涼熱適度,否則適得其反。秋

 季適宜潤燥清補,人們應選用防燥不膩的平補之品,燕窩正

 是秋季進補的溫良品,而且燕窩能夠調節人體免疫、呼吸

 系統、肝肺功能,以達秋季養生之功效。

下面介紹一種最簡

 單的燕窩食用方法:

Here's one of the most simple ways to eat bird's nest:

Simple Bird's nest cooking method:

  

 金絲燕窩/燕盞簡單食用方法


 四人份量材料:

 燕盞(2至4片)、已煲滾的過濾水或蒸餾水(300至500ml)

 冰糖及椰漿或鮮奶(隨個人喜好放份量)

 

 做法:

 1.把2至4片燕盞放在過濾水中浸半個小時後把水倒掉

   

 2.燕盞放在燉盅內加入已煲滾的過濾水或蒸餾水

  (可同時放入適量冰糖)

 

 3.隔水中火燉約45分鐘即可食用。食用時可放入小量椰汁

   或鮮奶便色香味健康俱全。

 

 

 除了這種最簡單的食法之外,燕窩與木瓜,紅棗,枸杞,

 銀耳,蓮子雪梨等食材也是非常般配的。

Ingredients for four servings :
Bird's nest(2-4pc), boiling filtered or distilled water (300 to 500ml)
Sugar and coconut milk or milk (personal preferences)
Steps:
1. Soak nests in filtered water(room temperature) for half an hour and then drained it
2. Add nests and sugar to steaming pot with boiled filtered water or distilled water
3. Medium heat, cook for about 45 minutes, add in a small amount of coconut milk or milk and serve
In addition to this meathod, bird's nest goes well with papaya, red dates, wolfberry, lotus seeds and other ingredients

 

 燕窩食譜(一人份量):

 

 以下是三道燕窩原味的做法,適合急需增強抵抗力人仕:

 

 一、燕窩米水 (一人份量)

 

 材料

 米 : 5g (約一湯匙)

 燕窩 : 一盞 (燕窩用純凈水泡半小時後備用,不建議用

        自來水浸泡)

 水 : 300~500ml 

 做法

 把泡好的燕窩放到鍋里和冷水一起煮30分鐘後,放米大火焗

 5至10分種即可。

 1. 燕窩米水可以用來沖奶給小孩喝。

 2. 一些體質虛弱者可空腹當早餐飲用。

 3. 燕窩及米再重復用熱水焗3至5次後,燕窩及米可食用。

Bird's nest recipe (one serving):
The following are three bird's nest original recipies for those in urgent need to enhance their immunity system:

  1. Bird's nest rice water (one serving)
    Ingredients
    Rice: 5g (about a tablespoon)
    Bird's nest: 1pc (recommend soaking in drinkable water for 30 minutes)
    Water: 300 ~ 500ml
    Method
    Place soaked birds nest in a pot with cold water and cook for 30 minutes, add rice and high heat, cook 5-10 minutes.
    Serve method
    1. Birds nest rice water can be used to replace water when combining with any powder formula (e.g. Baby milk powder formula)
    2. The weak or sick can drink to replace breakfast.
    3. Nest and rice can be cooked again with hot water 3-5 more times, rice and nest are still edible.

 

 二、燕窩蒸飯 (一人份量)

 

 材料

 米 : 100~150g

 水 : 適量 (100ml 至150ml)

 燕窩 : 一盞或兩盞 (燕窩用純凈水泡半小時後備用,

        不建議用自來水浸泡)

 做法

 在做飯的過程中,直接把泡發好的燕窩放在飯面上蒸熟,

 燕窩營養滲入飯里,這樣蒸出的飯營養價值更高。

  1. the bird's nest steamed rice (one serving)
    Ingredients
    Rice: 100 ~ 150g
    Water: moderate (100ml to 150ml)
    Bird's nest: one or two  (recommend soaking in drinkable water for 30 minutes)
    Method
    When steaming rice, place soaked nest directly onto the rice.
    The nutrients will be absorbed by the rice therefore will have a higher nutritional value.

 

 三、燕窩瘦肉粥 (一人份量)

 

 材料

 米 : 一量杯約 50g

 水 : 約 1000ml

 瘦肉 : 20g (切絲備用)

 燕窩 : 一盞或兩盞(燕窩用純凈水泡半小時後備用,不建

        議用自來水浸泡,同時浸泡的水可以用來煲粥)

 做法

 1.把水放入鍋里燒開;

 2.把米倒入鍋內燒30分鐘;放入切好的瘦肉絲及燕窩再燒

   30分鍾關火,加入調味即可食用。
 

3. the bird's nest lean meat congee (one serving)
Ingredients
Rice: a cup of about 50g
Water: about 1000ml
Lean meat: 20g (shred)
Bird's nest: one or two (recommend soaking in drinkable water for 30 minutes, water can be reused to make congee)
Method
1. Put water to a boil;
2. Add the rice and cook for 30 minutes; add chopped meat and bird's nest cook for another 30 minutes, add seasoning and serve.

 燕窩食譜(二人份量):

 

 以下是五道燕窩做法,操作簡單且美味無極限


 浸發燕窩小貼士:

 浸發燕窩之食用的水,一定要用過濾水或蒸餾水.

 

 燕窩清燉雪梨 - 止咳潤肺

 材料: 燕窩一盞,雪梨一個,馬蹄十枚,川貝一錢,

       水四碗,冰糖份量隨意。

 做法: 把上項材料同時放入燉一小時後,即可食用。

 

 椰汁冰糖燉燕窩 - 養顏潤肺

 材料: 燕窩一盞,鮮奶兩碗,椰汁兩湯匙,冰糖份量隨意。

 做法: 將燕窩,冰糖,鮮奶一起燉一小時分鐘,最後將

       椰汁倒入即可食用。

 

 花旗參冰糖燉燕窩 - 清熱潤肺

 材料: 燕窩一盞、花旗參一錢(或10小片)、冰糖少許,

       水兩碗。

 做法: 燕窩浸透半小時後,把水倒掉,連同花旗參,

       冰糖及兩碗水一起放入燉盅內,加水適量,

       隔水燉約1小時後分鐘,即可進食。

 

 木瓜燉燕窩 - 養顏滋潤

 材料: 鮮熟木瓜1/4~1/2個(視大小而定),燕窩一盞、

       冰糖少許。

 做法: 木瓜洗淨外皮,用刀剖開,去除內核,用湯匙挖出

       木瓜肉,備用。將水, 浸泡發好的燕窩和木瓜肉,

       加入少許冰糖,一同放進木瓜內,隔水燉1小時即可

       食用。

 

 杏汁燉燕窩 - 健肺化痰,止咳養顏

 材料: 燕窩一盞,南杏2兩(約80克),北杏2錢(約8克)

       糖適量。

 做法: 將南杏及北杏放入攪拌機內加二碗水攪成杏汁,

       倒入紗布袋內隔去杏渣。然後再將糖加入杏汁

       及燕窩隔水燉一小時即可食用。

The following are five nests recipes, simple and delicious
Tips for soaking Bird's nest:
Be sure to use filtered water or distilled water.

Stewed bird's nest and pear - benefit: helps to stop cough, nourish lungs
Ingredients: a bird's nest, a pear, Water chestnut 10pc, fritillary 4g, water 4 bowls, sugar (Optional).
Method: Combine all into a single pot and cook for an hour then serve

Coconut milk stew bird's nest - benefit: lungs and skins
Ingredients: a bird's nest, two bowls of milk, two tablespoons of coconut milk, sugar (Optional).
Method: Stew bird's nest, rock sugar, milk together for one hour and serve with coconut milk

Ginseng stewed bird's nest - benefit: Remove internal heat, nourish lungs
Ingredients: a bird's nest, ginseng 4g (or 10 small pieces), a pinch of sugar, Water 2 bowls.
Method: bird's nest soaked for half an hour, drain the water combine ginseng, Sugar and water together a single pot, add additional water, Stew for about 1 hour then serve

Papaya stew bird's nest - benefit: nourish skin
Ingredients: fresh ripe papaya 1/4 to 1/2pc (depending on size), a bird's nest, a pinch of sugar.
Method: Wash the skin papaya, cut open with a knife, remove the core, dig out Papaya meat with a spoon and set aside. Put bird's nest, papaya meat and sugar into the papaya (the skin is acting as a container) and stew for 1 hour.

Apricot juice stewed bird's nest -benefit: strengthen lungs, remove phlegm, stops cough and nourish skin 
Ingredients: a bird's nest, South apricot about 80 g, North apricot about 8 grams, Sugar (optional).
Method: Put South apricot and North apricot with two bowls of water to the mixer to produce apricot juice, Pour into gauze bag to separate apricot residue. Then combine sugar, apricot juice and bird's nest, stew for an hour and serve.

 

 其他燕窩食譜:

 

 一、冰糖燕窩

 用料:燕窩,純淨水,紅棗,枸杞,玫瑰花瓣,冰糖

 健康功效:

       紅棗:安神、補脾胃、輔助降血脂

       冰糖:和胃、健脾、潤肺止咳

 做法:把燕窩用純淨水泡發6-8小時,按紋理撕成條狀;

       加入適量的純淨水,要漫過燕窩,加入冰糖,加入紅

       棗和枸杞;放進鍋中,隔水燉30分鐘,起初可以用大

       火,等鍋堛漱艨}了後可以轉中小火,記得蓋上鍋

       蓋,出鍋後撒上點玫瑰花碎瓣就可以了。

 

 二、燉燕窩

 用料:燕窩,杞子,紅棗,冰糖

 健康功效:

       冰糖:和胃、健脾、潤肺止咳

       枸杞子:潤肺、輔助降血脂、輔助降血壓

       紅棗:安神、補脾胃、輔助降血脂

 做法:燕窩一塊,清水泡發6小時,加入杞子,紅棗,加入

       冰糖100克左右,放進電鍋燉60分鐘(熱水燉)就可

       以了。
 
 三、素燕窩

 用料:冬瓜,銀耳,糯米和大米,椰汁,冰糖,土豆澱粉

 健康功效:

       冬瓜:化痰、利水、清熱

       銀耳:潤肺、輔助降血脂、輔助降血壓

       冰糖:和胃、健脾、潤肺止咳

 做法:銀耳泡發,洗淨摘成小塊,糯米和大米1:1的比例放

       水熬成米湯,過濾掉米渣,放入銀耳、冰糖熬20分鐘

       左右,直至銀耳變軟糯;再加上椰汁煮開;冬瓜去皮

       去瓤切成細絲,放入碗中倒玉米澱粉混合均勻,鍋

       坐水不用煮開,看鍋邊微微泛起小泡放入冬瓜絲,放

       下去之後不要去攪動它,等冬瓜絲變透明後撈出,泡

       在涼水中備用,湯倒入碗中放上透明的冬瓜絲再來一

       兩個紅棗點綴,一碗素燕窩就好了!

Other bird's nest recipe:
1. rock sugar bird's nest
Ingredients: bird's nest, purified water, red dates, wolfberry, rose petals, sugar
Health Benefits:
Dates: calm nerves, strengthen stomach, reduce blood lipids
Rock sugar: neutralise stomach acid, nourish lungs and stops cough
Method: soak bird's nest with water for 6-8 hours, follow and torn to strips; Adding an appropriate amount of purified water to cover the bird's nest, add sugar, add red Jujube and medlar into the pot, stew for 30 minutes, and at first you can use strong fire, until the water boil, then switch to low fire, remember to cover the pot, finally serve with rose petals.

2. Simple stewed bird's nest
Ingredients: bird's nest, wolfberries, red dates, Rock sugar
Health Benefits:
Rock sugar: neutralise stomach acid, nourish lungs and stops cough
Wolfberry: lungs, reduce blood lipids, lowering blood pressure
Dates: calm nerves, strengthen stomach, reduce blood lipids
Method: Soak bird's nest 6 hours, add wolfberries, red dates, add About 100 grams of crystal sugar, place into the rice cooker stew 60 minutes (hot water) and serve

3. vegetarian bird's nest
Ingredients: white gourd, silver ear fungus, sticky rice and rice, coconut milk, sugar, potato starch
Health Benefits:
White gourd: removes phlegm, reduce internal heat
Silver ear fungus: nourish lungs, reduce blood lipids, lowering blood pressure
Rock sugar: neutralise stomach acid, nourish lungs and stops cough
Method: Soak silver ear fungus till bloated, wash off and picked into small pieces, sticky rice and rice 1: 1 ratio and make rice water, filtered residue.Combine in silver ear fungus, rock sugar, and rice water then stew for 20 minutes or until silver ear fungus becomes soft, add the coconut milk and bring to boil. Peel and shred the white gourd, mix with potato starch, then add into simmering water, wait until the gourd becomes transparent ( remember not to stir) then transfer it into cold water and set aside. When ready to serve, add the gourd and 1 or 2 dates (optional) into the silver ear fungus mixture and serve.

 

 四、木瓜燕窩

 用料:木瓜,冰糖,枸杞,燕窩,純牛奶

 健康功效:

       木瓜:和胃、通絡舒筋、化濕

       冰糖:和胃、健脾、潤肺止咳

 做法:燕窩泡四個小時,洗乾淨切成條狀,放入燉鍋,加入

       適量的水,燉一個小時,一個小時之後加入冰糖和純

       牛奶,繼續燉十分鐘,木瓜切開,去掉堶悸漪鞳A備

       用,然後把做好的倒進木瓜堶情A加上幾顆枸杞就可

       以了!

 

 五、燕窩

 用料:燕窩,枸杞,冰糖,小玫瑰,紅棗

 健康功效:

       冰糖:和胃、健脾、潤肺止咳

       紅棗:安神、補脾胃、輔助降血脂

 做法:泡半個小時,順紋理撕開,隔水燉,水沒過燕窩

       兩公分,小火慢燉30分鐘,燉到20分鐘的時候加

       進去輔料出鍋就可以了!

 

 六、冰糖燕窩

 用料:燕窩,冰糖,枸杞子

 健康功效:

       冰糖:和胃、健脾、潤肺止咳

       枸杞子:潤肺、輔助降血脂、輔助降血壓

 做法:先把冰糖化開成糖水,燕窩用溫礦泉水泡三小時左

       右,然後撈入白盤。先將蒸鍋燒開,把燕窩扯開成

       均勻絲狀,放入碗堨[入燒開的礦泉水,水量剛淹

       沒食材略高半釐米為宜,碗上蓋個盤子,加鍋蓋隔

       水蒸,水開後中小火蒸15至20分鐘左右關火,取出

       裝入小碗內,加入枸杞子和冰糖水即可!
